
What do you get when you add chocolate to peanut butter? A new reason to eat peanut butter and jelly sandwiches! Make up a few jars of homemade chocolate peanut butter to give as gifts, and then make a few more for yourself. This is one treat you're not going to want to part with. It's delicious! You can use it as a fruit dip for apples, bananas and any other fruit you'd like but try it with big pretzel sticks...yum!
It's so easy to make your own gourmet chocolate peanut butter you'll wonder why you hadn't thought of it sooner. It's also great for bake sales or fund-raisers.
Ingredients:
1/2 cup semisweet chocolate chips
1-1/2 cups smooth peanut butter
1/4 cup butter or margarine, softened (I use butter)
1/4 cup confectioners sugar
1 teaspoon vanilla extract
1 teaspoon instant coffee granules
1 teaspoon hot water
Preparation:
Melt chocolate chips in a double-boiler or in the microwave until smooth. Take care not to scorch the chocolate. This only takes about 1 1/2 minutes in my microwave. I use a glass casserole dish.
Add peanut butter, butter, confectioners sugar, and vanilla extract. Stir until thoroughly combined.
Mix instant coffee with hot water until completely dissolved. Add coffee to the chocolate peanut butter mixture until combined.
Scrape into glass jars with tight seals. Serve as a spread with fruit, pretzel sticks, cookies, crackers, or toast or use as a filling for cakes. You can even use it for ice cream topping!
Yield: about 2 cups
