
These are healthy muffins that are sweet, satisfying, moist, and perfect for breakfast or a snack. They freeze well so bake a double batch and put some away to enjoy at a later date.
Ingredients:
1 1/4 cups whole wheat flour
1 1/4 cups oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 cup unsweetened applesauce
1/2 cup buttermilk (don't have any on hand? Check my archives and make your own!)
1/2 cup firmly packed brown sugar
2 tbsp canola oil
1 large egg, lightly beaten
3/4 cup blueberries (fresh or frozen...if using frozen do not thaw)
Preheat oven to 375 degrees.
Line muffin tins with paper muffin cups or spray with nonstick cooking spray.
In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl combine applesauce, buttermilk, brown sugar, oil and egg. Add applesauce mixture to dry ingredients. Stir just until moistened. Gently fold in blueberries. Fill muffin cups 2/3 full.
Bake for 16-18 minutes.
Yield: Approximately 12 muffins.

I am always on the lookout for healthy muffin recipes since they always make great additions to my family's brown bag lunches. This recipe looks great!
They are wonderful! My only complaint is I made them to small but that's ok...I'll eat 2 ! ;)
