According to the etiquette, class and elegance of days gone by, a lady should be quiet in her manners, natural and unassuming in her language, careful to wound no one's feelings, but give generously and freely from the treasures of her pure mind to her friends. She should scorn no one openly, have a gentle pity for the unfortunate, and at the same time carry herself with an innocence and singleheartedness that disarm ill nature and win respect and love from all. Such a lady is a model for her sex, the "bright particular star" on which others look with reference. The influence of such a woman is a power for good that cannot be overestimated.

Many things in life have changed and evolved with time, yet I believe women should still make every attempt at being quiet and graceful in their manner. I would be the first to admit that it is not easy these days to practice that "quiet and unassuming manner" but I will practice it (to no avail at times I'm sure), day by day, and make it habit.

Today, whether you are entering or leaving a room, purchasing groceries or pumping gas, hold your head up high. Live your day with class and elegance. Hold your head high, shoulders back, lengthen your spine and tuck your tummy in. Gracefully walk to your destination always with purpose. Buy yourself some flowers. Listen instead of talk. You have accomplished a lot to date. You need to show yourself strong, confident and proud. You'll be surprised how much better you'll feel about yourself and how many heads will turn to see the lady of the day (you), full of manners, class and elegance.

No Knead Ciabatta Bread! I am going to start a loaf of my ciabatta bread today and thought I would repost for those of you who did not view it the last time I posted it. This bread is SO easy you will wonder how they can charge so much for it at the market. If you love fresh bread but thought you couldn't bake it, or you're intimidated by the whole process of kneading etc, please give this a try. I promise you, you will be amazed at how easy and wonderful it is! You can make additions to this loaf after it rises. Before placing dough on the cookie sheet stir in some black olives, chopped onion, sun dried tomato etc. Play with this recipe, sprinkle cheese and jalapenos on top etc. I am certain it will be your favorite bread recipe ever!

Ingredients:
4 cups bread flour (I use 3 1/2 cups white and 1/2 cup wheat)
*Note: you can use all purpose flour
1/4 tsp yeast (I use the quick rising or yeast from the jar)
2 cups warm water (blood warm..not to hot or it will kill the yeast)
1 1/2 tsp salt

Cornmeal or parchment (or both in my case) for the cookie sheet

That's it! Now just add the ingredients to a bowl, stir them together and cover with foil. I set mine on the counter or on the top of the stove. Let it rise 18 hours.

Yes, 18 hours!! This is the only drawback because if you want this bread you have to start it the day before you want to eat it. I start it around 3pm one day and bake it at noon the next day for lunch.

After the dough has risen, place parchment paper or cornmeal (or both) on to a cookie sheet. If you want to add anything to the dough, do it at this point, stir it in. Then pour dough out on to the cookie sheet with parchment and cornmeal and mold in to the ciabatta shape. Sprinkle a little flour on top and cover with a dishtowel. Let it rise for 2 hours.

Bake at 425 for 30 -35 minutes or until golden brown. Loaf will sound hollow when tapped.

Honey, Lemon, Oat Scones

These scones are delicious on their own, with a bit of butter, or with the homemade blueberry jam I make to go with them (on the post below). You will not be disappointed!

Ingredients:
2 cups All Purpose flour (bleached or unbleached is fine)
1 and 1/2 cups rolled oats (I used quick)
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup unsalted butter, very cold, and cut into small chunks
2 tsp. fresh lemon zest
1 large egg, beaten
1/4 cup honey (I used organic orange blossom honey)
1/2 cup buttermilk
1 tsp. fresh lemon juice
1 tsp. vanilla extract

Preheat oven to 425 degrees. Line a baking sheet with parchment paper.

In a large bowl, combine the flour, oats, baking powder, baking soda, and salt with a whisk. Add in the lemon zest and stir it in with a fork.

Using a pastry blender, cut in the butter chunks well, until there are no large pieces left.

In a small bowl, whisk together the beaten egg, honey, buttermilk, lemon juice, and vanilla.

Make a well in the center of flour mixture. Pour the liquid mixture into the well, and mix together with a spoon just enough to evenly moisten the dry ingredients and form a soft dough.

With floured hands, gather the dough into a clump and dump it onto a lightly floured surface. Pat the dough into a circle roughly 9" in circumference.Using a sharp knife or a pizza wheel, cut the pieces into 12 triangles (I cut mine in to 6), like you would a pie.

Place each piece about an inch apart on the lined cookie sheet. Sprinkle a pinch of sugar on top of each scone if desired. Bake for 10 to 15 minutes, or until just lightly browned on the top and bottom. They bake quickly, so check on them early.

EASY Homemade Blueberry Jam, and no canning equipment is needed! This jam recipe is so easy anyone can make it. You don't need jars or have to deal with sterilizing anything and you can have jam in no time at all! I made this to accompany our scones, but this jam is also wonderful on vanilla ice cream or in the middle of fruit bars!

This recipe makes 2 small 8 oz. containers. I use the same little glass containers I put our homemade butter in and it's perfect. Don't expect it to last long, it's delicious!

Ingredients:
5 Cups Blueberries
1/2 cup sugar
1 tablespoon fresh lemon juice (I used Real Lemon in the bottle)
1/4 teaspoon kosher salt

In a medium saucepan, combine the blueberries, sugar, lemon juice and salt. Mash with a potato masher or wooden spoon until the berries have released their juices.

Cook over medium high heat, stirring every couple minutes, until the mixture is thickened. This takes me about 25 minutes or so.

Transfer to your containers and refrigerate or freeze. If freezing, this jam will last up to 1 year. (BUT only if you forget it's there ;)

*You can also use 2 10 oz. bags of frozen blueberries for this recipe. Cook the frozen berries for 2-3 minutes before mashing. I find the frozen berries don't "set up" quite as well due to the extra moisture from being frozen, but it's still wonderful.

The Elecampane...

Elfwort and Elf Dock are folk names for elecampane, an herb whose roots are used in fairy magic. Scattering the root about is said to attract fairies to your home, and growing elecampane is said to attract them to your garden.

Elecampane, also called wild sunflower scabwort, and horseheal, is a perennial garden flower traditionally used to kill intestinal parasites and treat bronchial congestion. Traditional Chinese and Indian Ayurvedic medicine recommends elecampane for treatment of bronchitis and asthma. It is also said to improve digestion, and has been used for many years to heal skin infections in horses and sheep.

The root was employed by the ancients both as a medicine and as a condiment, and in England it was formerly in great repute as an aromatic tonic and stimulant of the secretory organs. As a drug, however, the root is now seldom resorted to except in veterinary practice, though it is undoubtedly possessed of antiseptic properties.

Today herbalists prescribe it as an expectorant and for water retention.

Victorian Trifle...

When you are planning your next tea, include this lucious trifle! It looks gorgeous and tastes heavenly, yet is easier to prepare than you could imagine. You can use pre-made fat free pudding from the purchased pudding cups to make it quick and even easier to prepare.

You will need:
Ladyfingers or pound cake (you can find sugarfree cake at the bakery, I like lemon)
Brandy and rum (optional)
Raspberry jam (you can use sugarfree)
Fruit cocktail, drained
Vanilla pudding
Whipped cream
Sliced almonds
Fresh or frozen raspberries
1 tbsp. butter

Line the bottom and sides of attractive glass bowl with ladyfingers or thinly sliced pound cake. You can also make individual trifles in wine glasses. Drizzle modest amount of brandy and rum over bottom layer. Spoon a layer with raspberry jam. Add drained fruit cocktail over the jam. Add vanilla pudding over the fruit; the more, the tastier. Top with whipped cream, almonds sauteed in butter, and raspberries; chill and refrigerate. Use within 1-2 days.

The Legend Of The Hyacinth

I have to admit I'm not fond of the meaning and symbolism of this lovely little flower, but I want to plant some around the cottage grounds none-the-less.

Legend has it that the origin of hyacinth, the highly fragrant, bell-shaped flower, can be traced back to a young Greek boy named Hyakinthos. As the story goes, two Gods – Apollo the sun god, and Zephyr the god of the west wind – adored Hyakinthos and competed for his attention. One day, while Apollo was teaching Hyakinthos the art of throwing a discus, Zephyr, in a jealous rage, blew the discus back, killing Hyakinthos with a strike to the head. Apollo named the flower that grew from Hyakinthos’s blood hyacinth.

Symbolizing sport or play in the language of flowers, hyacinths represent constancy, while blue hyacinth expresses sincerity.

Fields of Gold Bath

If you love relaxing baths like I do, here is a recipe you can make for bath sachets.
This is especially nice after a long day at work. Light a candle, grab a magazine and soak away the worries of the day.

You will need:
4 cups of powdered milk
1 cup boiled water
1/2 cup dried chamomile or 5 chamomile tea bags
Directions:
Steep chamomile in water for 20 minutes, Strain liquid and mix with milk. Add to bath water.

Fudge Delight

I first posted this recipe in 2009 but thought it was a perfect repost since Valentine's Day will be upon us soon. What's the best treat for Valentine's Day? Chocolate! And is there anything better than a rich piece of homemade fudge? This recipe is not only decadent but easy! Enjoy!

Yield: Makes 3 dozen pieces
Ingredients:
4 ounces unsalted butter
6 ounces semi-sweet chocolate chips
1/3 cup evaporated milk
16 ounces confectioners' sugar
1 teaspoon vanilla
1 pinch salt
1/2 cup chopped English walnuts
1 cup miniature marshmallows

Heat the butter, chocolate chips, and milk together in a sauce pan over medium heat, stirring until smooth. Pour into mixing bowl and beat in confectioners' sugar, vanilla, and salt until thoroughly mixed. Fold in the chopped walnuts and miniature marshmallows and pour into a buttered 8"x8" pan. Let sit for about an hour and then cut into 36 pieces (6x6).

Not only is the Amethyst my birthstone, it has been a prized gem for centuries. It is the birthstone for Pisces and the month of February, and the gemstone for the 6th anniversary of marriage.

Throughout history Amethyst has been used to guard against drunkenness, and is thought to be helpful in overcoming addictions. It has been used for hearing disorders, insomnia, headaches and other pain. Some sources suggest it's used to stabilize mental disorders.

Traditional St. Brigid's Cross

Born the daughter of an Irish chieftan, circa 453 AD, Saint Brigid became a nun whose desire was to relieve the misery and hardship of the poor. Her feast day, the date of her death, is February 1st. The popular tradition of the woven St Brigid cross is believed to have begun during a visit by Brigid to a dying pagan chieftan. To illustrate the significance of the Christian faith she quickly wove a simple cross from the rushes strewn on the floor covering of the time. From this time on the woven rush cross has become synonymous with the Saint. Commonly hung over the doorway in many Irish homes, it is believed to bless and bring luck to every person who crosses the threshold.

To say it has been annoying would be a gross understatement, but the comment from The Healing Home had me looking around google chrome for a way to reset my blog to the old format. I found one and, at least for today, it seems to have worked!! Oh happy day! Thank you Healing Home! It's still on the google chrome background but my old format has popped up so I can insert my photo, see my blog design etc. I am of the thinking, "if it's not broken don't fix it!" Oh please...I know the computer world has to go forth and get bigger and better for our ever evolving electronic world, but can't you just leave our blogger site alone? Is it a lesson in frustration? I was failing it miserably, and I am not one to take failing lightly.

Loving Lavender

Lavender is one of my favorite plants for so many reasons. It has a place growing front and center at Our Scented Cottage and never fails to look lovely. I have used it to scent our rooms, I have made fragrant pillows with it and I have the oils on hand to use in the bath for those times I really need to relax. Here are some other ways to use lavender if you are lucky enough to have access to it around your cottage.

Aching Muscles
If you’ve spent an afternoon in the garden (where I live it's almost year round gardening) and you're feeling sore, jump into a lavender bath to soothe aches & pains. Apply Epsom salts & a few drops of Lavender Oil to the bath and enjoy. You can purchase the oils now at many stores. I frequent one of our local health food stores where I like to browse all of the many oils they offer.
Acne
Lavender is one of the most valuable oils for the treatment of acne, according to aromatherapists. It inhibits the bacteria that causes the skin infection, helps to rebalance the over-secretion of sebum, which the bacteria thrive on, and reduce scarring. You can find many lavender products on the market now but I absolutely love the L'Occitane line. If you do not have a store near you check online at http://www.loccitane.com. This is a great time of year to try lavender since the heat from our winter furnaces dries out our sensitive skin.
Bugs & Bacteria
French laboratory studies in the early 20th century showed that lavender is a powerful antibacterial in dilutions of 5 per cent or less. It is lethal to bacteria that cause typhoid, TB & diphtheria. You can combine it with Lemon Balm, for its clinically tested anti-viral properties.
Burns (minor)
After you have cooled the area by immersing it in running cold water for 5 minutes, gently stroke on lavender oil. Pain relief is almost immediate, and the burn usually heals without scarring. Aloe is also wonderful for this.
Cuts & Wounds
Apply lavender oil to sooth pain, prevent bacterial infection and aid scar-free healing.
Earache
Warm a bottle of lavender oil in hot water for a minute or two, then gently massage a few drops into the skin around the ears and throat. For babies & small children, add 2-3 drops of the warmed oil to a little olive oil and massage in the same way.
Eczema
Stroke infused lavender oil (a few drops of lavender oil & carrier oil) into dry, itchy skin—small children will find this especially comforting or add a few drops of lavender oil to calamine lotion, shake before use.
Fatigue
Add 5 drops of lavender oil to a hot foot bath and relax while your feet soak in it. The soles of the feet are particularly porous, so lavender reaches your bloodstream very quickly, exerting its stimulating and soothing effects on various systems of your body.
Fevers
For babies or small children, sponge them down very gently with tepid water to which you have added a drop of lavender oil. Take care not to let them get chilled. This works for adults too.
Make your own smelling salts—Use sea salt , lavender oil, peppermint oil & basil oil.
Headache
The distilled water of Lavender Mist around your head, is refreshing and soothing. Alternatively, make a compress of a piece of cloth or muslin soaked in icy cold water then sprinkled with a few drops of lavender oil and apply to the forehead, or massage a few drops into the forehead, temples and nape of the neck.
Insomnia
In a number of small studies that I've read, elderly psychiatric patients have been shown to sleep better and be more alert during the day when their sleep medication is replaced with lavender oil either dropped on their pillows, or placed in a diffuser on the ward. To help to induce sleep, put 3 or 4 drops of lavender oil on your pillow. For babies, add 1 drop of lavender oil & geranium oil in carrier oil and massage into a babies back or a few drops in their bedtime bath.
Menstrual Cramps
Massage a few drops of lavender oil into your lower abdomen or apply a hot compress onto the area, which a little lavender oil has been sprinkled. I make wonderful little pillows filled with some flax seed, rice, and lavender buds. These pillows can be either put in the freezer or heated in the microwave for wonderful scented therapy! The flax holds cold and heat for quite awhile and these pillows are very effective! I also make them with spices for a cinnamony scent. Moths,Midges & Mosquitos
These annoying little insects all hate the smell of lavender. To prevent bites, splash yourself with lavender hydrosol before you go out at sunset or to bed, put 3-4drops of oil on your pillow or soak cotton wool ball in the oil and leave it on a saucer in front of the window. Lavender oil is also a terrific remedy for insect bites, soothing itching & inflammation: dab it on to them as soon as possible. To keep moths off your clothes, hang lavender bags on your coat hangers or keep them among your sweaters and refresh them with a drop or two of lavender oil from time to time.
Shingles
Combine a mix of lavender oil with analgesic, antiviral & scar preventing essential oils on compresses to the agonizing lesions of shingles. It usually produces a cure within 5-8 days.
Sinusitis
Lavender is one of several essential oils that aromatherapists recommend for inhalations to relieve sinusitis. Add two drops of lavender & thyme oil to a bowl of near-steaming water and inhale slowly and deeply, with a towel over your head and the bowl.
Stress & Anxiety
Keep a spritzer of Lavender Mist handy to spray on your face during the day, or apply lavender oil to your temples.
Sunburn
Spray pure Lavender Mist directly onto the skin or add 8 drops of lavender oil and 4 drops of peppermint oil to a teaspoon of jojoba oil. Pour it into a cool-to-lukewarm bath and soak for 10 minutes.

Heavenly Cups Of Comfort

I first posted this recipe in 2008 and decided it was worthy of a repost! If you love chocolate you will adore this...a treat so wonderful it will leave you speechless!

Chocolate... it is the voice of passion and love, whether it is the love of chocolate itself or as an expression of love for another human being, it is the perfect gift for those we care about or just want to impress. This recipe will surely be a favorite once you try it.

Chocolate Pot de Creme

2/3 cup cream (light cream or heavy cream)

1 (11.5-ounce) package Ghirardelli 60% cocoa bittersweet chocolate chips

3 tablespoons very strong prepared coffee

2 tablespoons coffee, coffee liqueur or brandy

2 eggs

Sweetened whipped cream,

Shaving Chocolate and Chopped nuts.

In a small, heavy saucepan over medium-low heat, heat cream just to boiling point and remove from heat.

In a food processor or blender, add chocolate chips; process to make smaller pieces of chocolate. Add coffee, coffee liqueur or brandy, eggs, and hot cream; cover and blend at high speed for about 3 minutes until well blended.

Pour into six fancy teacups or custard cups. Refrigerate at least 4 hours or overnight. NOTE: After pudding has cooled, cover containers with plastic wrap.

To serve, top with whipped cream; garnish with chocolate shavings and nuts.
Makes 6 small custard servings or 4 tea cup servings.

Dear Friends,I am feeling very frustrated and disappointed as I write this post, for it may be the last one on Our Scented Cottage blog. It appears as though google has changed blogger and it has been very difficult accessing my blog this morning. Nothing on my dashboard is as it should be, and I'm not even certain how this will appear after I push the publish button. Hopefully it will post so if I cannot access it again, you will know what has happened. I will miss my time with you and viewing where all of my readers are logging in for the day. I am not as versed with the computer as some, and in fact, pen and paper suit me much better if truth be told. I will make attempts at figuring out what is happening here but if I can't, I have very much enjoyed the past years with you all. Is anyone else having this issue with blogger? Have you somehow been able to repair it or do you have any tips for me? Sending you all blessings for the best life has to offer you.Laura

Scones..A Diabetic Recipe

Try as I might, I simply can not live without scones. There is something about scones and tea that I find comforting and a basic part of my being. This is one of the diabetic recipes in my scone collection and I believe you'll enjoy them as I do if you give it a try.

As always, I use I Can't Believe It's Not Butter cubes in place of the butter in this recipe. I have also been known to substitute Splenda in the place of the sugar and no one is the wiser.

Ingredients:
1 cup + 2 Tablespoons unbleached flour
2 Tablespoons sugar
1 Tablespoon baking powder
1/4 teaspoon each: salt, baking soda
2 Tablespoons cold butter
1 large egg
1/3 cup low fat buttermilk

Mix dry ingredients in bowl, reserving 2 Tablespoons of flour.

Add butter, using pastry cutter or 2 forks, cut to coarse meal consistency. (I just use my fingers)

Whisk egg and buttermilk together and add to batter. Flour hands and work area with reserved flour to prevent sticking. Form 6 rounds and place on ungreased baking sheet.

Bake 12 minutes in 400 degree oven.

Nutritional Value: 1 scone = 125 cal, 4 fat grams, 4 grams protein, 20 carb grams

You can be as creative as you like by adding your favorite flavors and textures to the plain scone recipe. Here are some ideas:

Blueberry Biscuits...

If you love scones, these biscuits will be a hit. If you watch sugar like I do, you can replace the sugar in the biscuit with Splenda or another sugar replacement product. You will have to use the sugar for the topping, however, because the Splenda just doesn't have what it takes to retain it's granulation when mixed with the butter. I always freeze my baked goods and have them at the ready for a quick breakfast, tea time snack or guests, and these freeze wonderfully.

For the butter I always use the I Can't Believe It's Not Butter cubes, but if you prefer, you can leave off the spice topping altogether to avoid the sugar.

Ingredients:
2 1/4 cups all-purpose flour, divided
1/2 cup granulated sugar (or splenda)
1 tablespoon baking powder
1 teaspoon fresh grated lemon peel
3/4 teaspoon salt
1/4 teaspoon soda
1/3 cup shortening
1 egg, lightly beaten
3/4 cup buttermilk
2/4 cup frozen blueberries (I use fresh but if you use frozen, keep frozen right up until adding to dough)

Topping:
3 tablespoons butter, melted
3 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
Dash ground nutmeg

Mix 2 cups of the flour with the sugar, baking powder, lemon peel, salt, and soda in a large bowl. Cut in shortening until mixture resembles coarse meal. Mix egg and buttermilk then stir into the flour mixture. Stir in the frozen blueberries. Sprinkle remaining flour on the countertop. Scrape dough out onto the flour; flour fingers and gently knead 6 or 7 times, just until dough begins to hold together. Pat dough into a rectangle or round 1/2-inch thick. Cut out rounds with a floured 2-inch cutter or glass. Place biscuits 2 inches apart on a lightly greased baking sheet. Bake in the center of a preheated 400° oven for 12 to 15 minutes, or until lightly browned.

This recipe states it makes 18 biscuits, not in my world! My biscuit cutter is a bit larger than that. :)

If you drink tea as much as I do, you are bound to have stains on the insides of your teapots. Clean regularly with these easy tips and your tea and coffee pots will stay sparking clean inside. Keep in mind, these stain removal tips are for ceramic or common materials. For fine china or delicate porcelain teapots, choose a gentle cleaning method like a baking soda soak or paste.

Teapot Cleaning Soaks
Fill a teapot with boiling water, squeeze the juice from a wedge of lemon (1/4 lemon) and toss in the peel, add 1/8 cup of baking soda. Soak overnight, wash well in the morning.

Fill teapot with boiling water and add 1/4 to 1/2 cup lemon juice, soak overnight then wash well in the morning.

Fill teapot with boiling water and add a couple denture tablets. Allow to sit overnight then wash with soap and water in the morning.

Put about 1/4 cup dishwasher detergent into the teapot, cover with boiling water and soak for a few hours or overnight. Wash well to remove all detergent residue.

If your cleaning soaks fail to remove all the stains try one of these scrubbing ideas:
Sprinkle a small spoonful of salt on a damp cloth and gently scrub.
Gently scrub stains with a baking soda and water paste.
Gently scrub tea stains away with a baking soda and lemon juice paste.
Make a paste of salt and vinegar, scrub onto the stain and wash off a few hours later.

The tips above will help with mug or tea cup stains as well.

Fairy Fachan...

The Fachan, or Peg-Leg-Jack as he is sometimes known because of his single leg, originated in Scotland. Matching his single leg, all of his features are singular. His element is air and he possesses one head, one eye, one arm, one leg, one toe, one finger and so forth, which are all perfectly centered on a body covered in hair and feathers. It's coloring is pitch black, aside from a dark blue mane of feathers which ruffles as a prelude to an attack. So fearsome is it's appearance, that the mere sight of the Fachan is credited with causing heart attacks.

The armament of the Fachan (sometimes spelled Fachen or Fachin) is a single spiked club. He uses this club to chase away all livings things. Indeed, he is a particularly spiteful fairy and is most jealous of the gift of flight he was denied despite his feathery crown. He can be found on the highest Scottish mountains, though why you would want to bother? Woe betide any human who dares enter his territory as he will attack them with his spiked club.

It is said that Nesnas Mhiccallain or Direach Ghlinn Eitich, (the Dwarf of Glen Etive,(Argyll)was a Fachan that lost a race against Murachadh MacBrian, King of Ireland in John Francis Campbell's Popular Tales of the West Highlands.

It has also been suggested that the Fachan is an imperfect memory of Celtic Seers who when casting spells would stand on one leg, close one eye and extend one arm.

The Latin name for this flower is "Endymion", for a shepherd boy with whom the Moon goddess, Selene, fell in love. Selene put Endymion into an eternal sleep so she alone could enjoy his beauty.

The bluebell represents humility, delicacy, and constancy. According to folklore, the fairies were called when the bluebell was rung, and these little flowers are also sometimes referred to as fairy thimbles. It's considered unlucky to pick or bring into the house the little bluebell flower. The fairies were believed to cast spells on those who dare to pick or damage the beautiful, delicate flowers.

In times gone by, some believed that if you heard a bluebell ring, you or someone close to you would soon die. It was thought to be unlucky to walk through a field of bluebells because the fields would be filled with magic spells and witches turned themselves into hares to hide among the flowers. For this reason, as well as the hares that frequent the fields covered in bluebells in Scotland, the Scottish call this flower the harebell.

Old time herbalists used the bluebell to help prevent nightmares, and as a remedy against leprosy, spider-bites and tuberculosis. The bluebell has since been found to be poisonous, so do not try any of these archaic remedies.

The Many Uses Of a Bounce Fabric Sheet

Today I'm presenting to you tips using something you may already have in your laundry cupboard! I always feel like I'm stretching my dollars when I find new uses for items we already own. Just look at all the wonderful things a "Bounce" (or any laundry static sheet) can do!

When I found these tips I just had to share them with you. I know you're probably thinking that Bounce sheets are to expensive to use in all these ways, but I always cut ours in half as soon as I bring them home from the market. You really don't need a whole fabric sheet in your dryer and you really get your money's worth that way.

1) Repel mosquitoes - Tie a sheet of Bounce through
a belt loop when outdoors during mosquito season. (ok..maybe not a chic look but better than contracting West Nile Virus!)

2) Eliminate static electricity from your television
screen - Since Bounce is designed to help eliminate static cling, wipe your television screen with a used sheet of Bounce to keep dust from resettling.

3) Dissolve soap scum from shower doors - Clean with a used sheet of Bounce.

4) Freshen the air in your home - Place an individual sheet of Bounce in a drawer or hang one in the closet.

5) Prevent thread from tangling - Run a threaded needle through a sheet of Bounce to eliminate the static cling on the thread before sewing.

6) Eliminate static cling from pantyhose - Rub a damp, used sheet of Bounce over the hose.

7) Prevent musty suitcases - Place an individual sheet of Bounce inside empty luggage before storing.

8) Freshen the air in your car - Place a sheet of Bounce under the front seat.

9)Keep the shock away - Place a sheet in your coat pocket to avoid the shock you get getting in and out of the car in the winter.

10) Clean baked-on food from a cooking pan - Put a sheet in the pan, fill with water, let sit overnight, and sponge clean. The anti-static agents apparently weaken the bond between the food and the pan while the fabric softening agents soften the baked-on food. (I like to use baking soda for this as well)

11) Eliminate odors in wastebaskets - Place a sheet of Bounce at the bottom of the wastebasket.

12) Collect cat hair - Rubbing the area with a sheet of Bounce will magnetically attract all the loose hairs.

13) Eliminate static electricity from venetian blinds - Wipe the blinds with a sheet of Bounce to prevent dust from resettling.

14)Wipe up sawdust from drilling or sandpapering - A used sheet of Bounce will collect sawdust like a tack cloth.

15)Eliminate odors in dirty laundry - Place an individual sheet of Bounce at the bottom of a laundry bag or hamper.

16)Deodorize shoes or sneakers. Place a sheet of Bounce in your shoes or sneakers overnight so they smell great in the morning.

Elegant Sugar Thins

Here is a delicate and tasty little cookie just right to nibble as you browse the latest posts on my blog. Enjoy!

Ingredients:
8oz butter (I use I Can't Believe It's Not Butter cubes)
1/2 tsp salt
8 oz Super fine sugar
1 tsp baking powder
1 egg, beaten
1 tbsp double (heavy) cream
10 oz plain flour, sifted
Flavoring:
Vanilla essence, lemon juice or ground ginger
Extra sugar

Cream the butter and sugar, then add the egg, cream, flour, baking powder, and salt. Divide the dough into three and flavor each piece differently with the vanilla, lemon or ginger (if desired). Form the dough into long rolls about 2 inches in diameter and wrap each one in foil. Put in the refrigerator overnight.

Preheat the oven to 375 degrees. Take dough from refrigerator and cut off very thin slices. Place on baking tray (I line mine with parchment) and sprinkle with sugar. Bake for about 5 minutes, they should be a pale golden color. Cool on a wire rack.

This dough keeps well so any that is not used can be rewrapped and replaced in the refrigerator or frozen.

Ingredients:
2 1/2 cups sifted bread flour
1/4 cup plus 1 tablespoon sugar
1 1/2 tablespoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup chopped fresh strawberries
1/2 cup finely chopped toasted almond slivers
1/2 cup plus 2 tablespoons heavy cream, divided
2 teaspoons lavender
2 1/2 tablespoons honey

1. Preheat oven to 400°. Line a baking sheet with parchment paper; set aside.

2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and baking soda. Add the strawberries and almonds, and toss gently to combine.

3. In a small bowl, microwave 1/2 cup cream on HIGH in 30-second intervals until cream simmers. Add the lavender to the cream, and let steep for 5 minutes; strain.

4. In a separate small bowl, mix together the honey and the lavender-infused cream. Pour the honey-cream mixture into the flour mixture, and stir until dough just comes together (dough will be sticky).

5. On a lightly floured surface, roll dough out to 1/2-inch thickness. Using a 2-inch square cutter, cut 12 scones. Place on prepared baking sheet, and brush tops with remaining cream. Bake 12 to 15 minutes or until light golden brown. Let cool slightly before serving.

What is it about the feeling I get after Christmas and New Years? Winter is just beginning, but I feel as if it should suddenly be the spring season. In my mind, nature should be bursting forth with green leaves and floral buds on all of the trees, when in reality they are all just beginning to take their winter's nap. I have felt this way every year. As Christmas decorations come down and New Year's Eve passes, my spring cleaning mood kicks in and I want to toil around the garden scattering seeds. I want to wash down everything in the house, sew new curtains, and buy new rugs to scatter about in anticipation of protecting our floors from my quick treks in from gardening for a nice, cool drink. Am I the only one who feels this way? I know...you're thinking, "what is she complaining about when she lives in a warm part of the country?" Well, really I have no complaints, and yes, it does feel springlike here even now. Perhaps it's the gardener in me. I've taken my rest from fall chores and I'm now eager for my new plantings and adorning Our Scented Cottage with blossoms all around.

For those of you in the cold parts of the U.S. do some sledding for me, have a cup of hot chocolate and enjoy the winter. I do miss that weather so. For now, I will enjoy my confused state of being and start planning my spring garden. Perhaps pour myself a cup of steaming hot lavender tea and daydream of sweetpeas and roses, hydrangeas and fushias, hummingbirds and open windows.

5 Ingredient Corn and Sausage Chowder

Yes, just five ingredients and your crockpot will provide you with a fabulously flavored thick and rich chowder. Serve it with some crisp crackers, biscuits or rolls for some wonderful winter comfort food.

Cook Time: 9 hours
Ingredients:
1 lb. smoked turkey sausage
3 cups frozen hash brown potatoes with onions and pepper
2 carrots, chopped
15 oz. can creamed corn
2 cups water
10 oz. can condensed cream of mushroom soup with roasted garlic
Preparation:
Cook turkey sausage, then cut into chunks. Place in 3-5 quart crockpot and top with potatoes and carrots.
In medium bowl, combine corn, water, and soup and mix until blended. Pour over ingredients in slow cooker. Cover crockpot and cook on low for 8-10 hours. 6 servings

Homemade Lemon Curd

In the late 19th and early 20th century, homemade lemon curd was traditionally served with bread or scones at afternoon tea as an alternative to jam, and as a filling for cakes, pastries and tarts. It's an English specialty and it's easy to see why. Lemon curd is a thick, soft and creamy, spreadable cream that has a wonderful tart, yet sweet, flavor. If you would like to make your own, it's surprisingly easy!

Be sure to wash your lemons as you will be using the rind in your recipe:

Makes 2 cups

1/2 cup fresh lemon juice
2 tablespoons lemon zest
3 egg yolks
1 1/2 cups sugar
1/2 cup butter, cut into pieces

1. In a double boiler over medium-high heat, whisk together lemon juice, lemon zest, and egg yolks. Add sugar and continue whisking for 8 to 10 minutes until lemon curd thickens slightly. Remove from heat, and gradually whisk in butter until melted. Cool mixture slightly; pour into container, and chill.

Ingredients:
3 Three Musketeers candy bars
1 package Pillsbury Crescents

Slice candy bars into 8 pieces. Unfold crescents. Place one piece of candy in the center of each crescent. Fold crescent around candy, being sure to cover all of it. Pinch seams closed. Place on ungreased cookie sheet. Bake in a 375 degree F oven until golden brown, about 11 minutes. Serve warm.

Chocolate Depression Cake..Vintage Recipe

This is a cake from the depression era. Easy on the budget with cocoa, vanilla, oil, vinegar, and other ingredients, you'll be surprised at how good it is.

Ingredients:

10 level tablespoons unsweetened cocoa
2 teaspoons vanilla
3/4 cup salad oil

Laundering Sweaters And Vintage Items...

In order to keep your sweaters and vintage clothing in its best condition, don't use your usual detergent. Even products marked as "gentle" are really quite harsh on old fabrics. A little Neutrogena face soap works very well and is what the Smithsonian Institute uses on many of their textiles. Use about 1/8 of a 3.5 oz. bar mixed with one cup of water, and add this to every gallon of washing water. Gentle agitation is all that's needed (no squeezing or twisting), and soaking for no longer than twenty minutes is all that's necessary. The garment is then preferably dried on a sweater screen, which will prevent it from stretching or straining against a hanger or clothes line. Electric dryers are best avoided, as they tend to set stains (and may actually shrink fabrics which might not have ever been inside a dryer).

When she's tired of eating Clementines? Use them in cookies, of course! During the holiday season we purchased a rather large box of clementines. I wanted to do something different with them since I have grown weary of consuming oranges, so today I decided to use them in Orange Marmalade Thumbprint Cookies! Normally I would use navel oranges for these wonderful tea cookies, but the clementines worked wonderfully! Double the batch like I did or you'll be sorry, they will go quickly!

Orange Marmalade Thumbprint Cookies

2 1/4 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup butter, softened (I used I Can't Believe It's Not Butter cubes)
2/3 cups sugar
2 large egg yolks
1 tablespoon finely grated fresh orange zest
1 tablespoon fresh orange juice
1 teaspoon vanilla extract
1/2 cup orange marmalade (maybe a little less depending on the size of your thumbprint)

Preheat oven to 350 degrees.
Line 2 baking sheets with parchment paper and set aside.
In a medium bowl, combine flour, baking powder, and salt. Whisk with fork to blend and set aside.

In a large bowl combine butter and sugar. Beat at medium speed until light and creamy. Add egg yolks, zest, juice and vanilla, beating to combine.
Add flour mixture a little at a time until moist clumps form. Gather dough into a ball.

Shape dough into 1 inch balls and place about 1 inch apart on cookie sheets. Using a floured finger or back of a teaspoon, make a depression in the center of each ball.
Drop a bit of marmalade in each thumbprint (about 1/2 teaspoon each).

Bake until golden brown about 15-18 minutes. Cool completely before tasting, the marmalade is hot! (The roof of my mouth can vouch for that!)

Brew A Perfect Pot of Tea...

Did you know that your tea will only be as good as your water? It's best to use filtered or spring water only. If you must use tap water, take water during the day from a tap and leave it out overnight, or you can boil it. Once the water has come to a boil, take the lid off the pot, turn fire down to low and continue to heat for 5 minutes. This gets rid of any unpleasant smells the water may have. The next day you can use this water to make your tea.

When preparing your tea, when the water is near boiling, pour a little into your teapot and swirl it around. This warms the pot so that it is at an optimum temperature for holding the tea, then empty the pot.

To the warmed teapot add one slightly rounded teaspoon of a tea per cup plus one teaspoon for the pot. If preferred, you can instead use one tea bag in the pot for each cup.

When the water in the kettle has reached a rolling boil, pour it into your teapot and allow the tea to steep for three to five minutes.

There is nothing like an afternoon tea break, unless you happen to have a little time for a nap!

Let's Bring Back The Rewards Of Merit

During the Victorian Era, well behaved school children were rewarded for good behavior with a small piece of paper called a Reward of Merit.

The Top of the card read "Reward of Merit," and written below was the student's name, followed by the teacher's signature who had issued the reward.

These cards were often pasted into the exceedingly popular Victorian era scrapbook albums to show a child's achievement and performance at school. Rewards were given by a teacher to a student for punctuality, attendance, proper conduct, their Sunday school work with younger students, and overall signs of improvement in the early 19th century one room schoolhouse curriculum. There are sometimes the same family surnames on reward cards, from student to teacher. Many early 19th c. children were taught by their own family members at home.

They certainly make a modern day "gold star" pale in comparison and I think it's time to bring this reward back. It's nice to realize that both merit and personal recognition were highly valued by teachers and students, and these tokens of appreciation were cherished enough to be saved for over one hundred years. Taking time out for tea relaxes your mind, replenishes your spirit and nurtures your soul. In addition, there is alot of research regarding the health benefits and advantages of taking tea. Some think that tea will dehydrate you. Tea not only rehydrates as well as water does, but it can also protect against heart disease and some cancers. Experts believe flavonoids are the key ingredient in tea that promotes health. There is also clear evidence that drinking three to four cups of tea a day can cut the chances of having a heart attack.

Some of the health benefits attributed to tea are:

Tea clears your arteries.
Tea calms inflammation.
Tea wipes out viruses.
Tea burns calories.
Tea protects oral health.
Tea inhibits cancer growth.

Some other benefits are:

Ingredients:
2 cups (280 g) unbleached all-purpose flour, sifted
1 packet sugar substitute (I use Splenda)
1 tablespoon (15 g) baking soda
8 ounces (240 ml) fat free plain yogurt(I make my own yogurt,it's wonderful!)
1 large very ripe banana, mashed
1/2 cup (240 ml) skim milk
1/2 tablespoon (7.5 ml) canola oil
1 teaspoon (5 ml) vanilla extract
4 egg whites, beaten to soft peaks
Cooking spray

Combine the flour, sugar substitute, and baking soda in a large bowl. Stir to combine.
Add the yogurt, banana, milk, oil, and vanilla. Stir until just moistened.
Gently fold in the beaten egg whites to complete the batter.
Lightly spray a nonstick skillet with cooking spray. Using a ladle make 4 inch pancakes. Cook until the bottom is browned and bubbles come to the top of the pancakes. Turn and continue to cook until browned.

1 orange
1 kiwi
1/2 mango
squeeze of lime juice

Peel the orange but keep as much pith on as possible. Peel the skin of the kiwi, this removes the bitter taste. Cut the kiwi into slices and divide the orange into segments. Peel the mango and chop into small pieces. Pass the fruit through the juicer and mix well. Enjoy!

Did you know that the Victorian era was particularly noted for fairy paintings? The Victorian painter Richard Dadd created paintings of fairy-folk with a sinister and malign tone. Other Victorian artists who depicted fairies include John Atkinson Grimshaw, Joseph Noel Paton, John Anster Fitzgerald and Daniel Maclise. Interest in fairy-themed art enjoyed a brief renaissance following the publication of the Cottingley Fairies photographs in 1917, and a number of artists turned to painting fairy themes.

The Brownie is a type of fairy, elf or tomte, and diminutive fairies of one kind or another have been recorded for centuries. The Brownie resides over the Lowlands of Scotland and up into the Highlands and Islands all over the north and east of England and into the Midlands. With a natural linguistic variation, he becomes the BWCA of Wales, the Highland Bodach and the Manx Fenodoree. In the West Country, Pixies or Pisgies occassionally perform the offices of a brownie and show some of the same characteristics, though they are essentially different.

Border brownies are small men, about three feet in height, very raggedly dressed in brown clothes, with brown faces and shaggy heads. They come out at night to do the work that has been left undone by the farm owners and servants. They make themselves responsible for the farm or house in which they live: reap, mow, herd the sheep, prevent the hens from laying away, run errands, and give good counsel at need. A brownie can become personally attached to one member of the family. Female Brownies are more rarely encountered than the males and many are strictly maternal. Brownie mothers are sometimes thought to live up chimneys and to have very long arms. A female Brownie called Hairy Meg (or Maggy) Molach is extremely industrious however, and is as legendary for her hard work as she is for her harsh temper.

Brownies can not accept “payment” or bribery of any sort for the work they have done. If payment of any kind is made, the brownie has to leave forever, never to return. The household can make offerings or sacrifices to the brownies, a show of gratitude if you will, by way of returning kindness, but only if it is not considered payment. If you fail to do this, the brownie may either stop helping, or possibly turn to mischief against you. Milk is often sprinkled in the corners of houses for the brownie’s use, or offerings of food are left out. Many homes used to have a “brownie stane” or stone, which was basically a stone with a hole bored into it, where they would pour offerings of wort, the liquid that ferments into beer. Also, in many Scottish homes a seat would be left open by the fireplace for the brownie.

Brownies are also associated with water. It’s said that while they don’t communicate with people, they are known to enjoy each others company quite a lot, and will often have celebrations and revelries near brooks, where their voices would mix and be hidden by the babble of the water. It's thought that perhaps the brownies were originally related to water sprites.

The Victorians considered green an unlucky color? It is also said to be an unlucky color for a nursery, or for the stone on an engagement ring (i.e. no emeralds!). This superstition actually had a basis in fact; many green colors in fabrics and wallpapers used to be made with arsenical salts, and it was not unknown for people to absorb these arsenical salts through their skin and die. Interesting, since in the 16th and 17th centuries, girls in their teens married in pale green, a sign of fertility.

Green is also associated with fairies, and its wearing is also said to foretell a change into clothes of mourning. Green has been deemed so unlucky that in the ancient times in Lowland Scotland neither bride nor guests would consider wearing it to a wedding. No green was even permitted in their wedding decor and green vegetables were banned from the feast menu.

Blackberry Tea Bars...

I love blackberries and I'm always looking for new ways to use them. This recipe uses blackberry jam so you can bake it even when blackberries aren't in season.

Were you aware that the blackberry is not a true berry? Botanically, it's termed an aggregate fruit. The plants typically have biennial canes and perennial roots. Blackberries and raspberries are also called caneberries or brambles. I grew up with them growing wild around us as a child and was able to enjoy them fresh from the canes, avoiding the sharp thorns to fill our buckets.

If you love blackberries and raspberries, bake a batch of these tea bars for your next treat.

Ingredients:
3/4 cup butter or I Can't Believe It's Not Butter
1 1/2 cups powdered sugar
2 egg whites
3/4 teaspoon almond extract
2 1/4 cups all purpose flour, sifted
1/8 teaspoon salt
1/2 teaspoon baking soda
1/2 cup blackberry jam (or raspberry jam)

Preheat oven to 350F. Spray a 9 x 13" baking pan with cooking spray.

In a large bowl, using an electric mixer on medium speed, beat together butter, powdered sugar and egg whites. Reduce speed to low and blend in almond extract, flour, salt and baking soda. Do not overbeat. Pour dough in to prepared pan, smooth the top with a rubber spatula. Lightly run spatula over the top of dough to make 7 or 8 criss crossing diagonal grooves. Fill the grooves with half of the jam. Bake in the preheated oven for 20 -25 minutes, until jam is firm and the edges begin to brown. Remove from oven and cool. Refill the grooves with more jam and cut in to 28 bars.

Fill Your Cottage With The Scent Of Irish Freckle Bread

I love bread all year round, but there is something about bread baking during the chilly winter months that soothes my soul. This wonderful potato bread gets just the right touch of sweetness from the raisins(it's freckles). It also makes great toast and spectacular bread pudding.

Ingredients:
1-1/2 cups water
3/4 cup peeled, cubed potatoes
2 to 3 cups bread flour, divided
1 package dry yeast
3 tablespoons granulated sugar
1/2 teaspoon salt
1 large egg, room temperature
1/4 cup unsalted butter, melted and cooled to room temperature
1/2 cup raisins
Vegetable oil spray

Directions:
1. Bring the water to a boil in a small saucepan. Add the potatoes and cook until tender, about 20 minutes. Measure off 3/4 cup of the boiling water. If there isn't enough potato water, add warm tap water to make 3/4 cup.

2. Mash the potatoes in a bowl. Add 3/4 cup of the flour, the yeast, sugar, and salt. Stir in the potato water with a wooden spoon, and continue stirring until the mixture forms a smooth batter.

3. Cover with a dish towel and set in a warm place until the dough doubles in volume, 1 to 1-1/2 hours.

4. Whisk the egg until frothy. Stir the egg, butter, and raisins into the batter. Start adding flour one-half cup at a time, mixing well after each addition, until you have a soft dough.

5. Preheat the oven to 375 degrees.

6. Turn out the dough on a lightly floured work surface. Divide the dough in half with the sides of your hand, and allow it to rest for 5 minutes.
Roll the dough into 2 cylinders, each about 9-inches long.

7. Grease a 9-inch by 5-inch loaf pan with the vegetable oil spray, and place the dough cylinders side by side in the pan. Cover with a towel and set in a warm place to rise again until double in size, about 45 minutes.

Remove the towel and bake the bread until light brown (it should sound hollow when tapped), about 20 minutes.
Makes 1 loaf

Yes! When you want some fresh baked bread but don't have the time to spend a few hours in the kitchen, bake it in your crockpot! If you love peanut butter you'll become hooked on this recipe.

Peanut Butter Bread
ingredients:
3/4 cup hot water
3/4 cup peanut butter
3/4 cup milk
1/3 cup granulated sugar
1/4 teaspoon salt
1 egg, slightly beaten
2 cups all-purpose flour
4 teaspoons baking powder
3/4 cup chopped salted peanuts

Place a small metal rack or trivet in a slow cooker to hold the bread pan away from the bottom of your crockpot. Grease a 5-6 cup mold or bread pan.

In a large bowl, pour hot water over peanut butter. Stir in milk, sugar, salt, egg, flour, baking powder and peanuts. Stir well. Spoon batter into prepared mold. Place in crockpot, cover and cook on HIGH about 5 hours.

Remove from crockpot and let bread stand 10 minutes before turning bread out on cooling rack. Slice and serve warm or cool. Spread with butter, jam or whatever you'd like.

Calm Down: Old fashioned lavender and vanilla based scents are proven soothers. Cucumber, green apple and evergreen scents, such as pine and spruce, also help decrease anxiety.

Perk Up: Rosemary, ginger, spearmint or peppermint. Each has increased attentiveness in studies. For relief in a floral form, try jasmine to boost alertness.

Get Smart: A bouquet of flowers with a hint of fruit can jump start the brain. Mixed floral scents, such as jasmine, accelerate learning.

Get Happy: Citrus fragrances reduced the amounts of medication needed by people suffering from depression.

It is a gorgeous stone indeed, and to my eye (and many others) you can not tell a white sapphire from a diamond when set in a gorgeous jewelry setting. What is Hogmanay you ask? If you have Scottish in your ancestry it's time you've learned some of the customs! December 31st is the official New Year holiday all over Scotland, as it is the New Year's Eve or the "Hogmanay." New Year in Scotland is celebrated with much enthusiasm on January 1st. Hogmanay is also called "night of the candle". The idea of celebrating Hogmanay dates back to the pagan celebrations of the winter solstice. These celebrations were inherited from the Vikings who celebrated Yule in the medieval period.

People of Scotland perform all traditions earnestly to bring in prosperity and good health in the New Year. There is a tradition of cleaning the house and the surrounding area on 31st December. They also burn juniper branches and carry them throughout the house. People believe that all debts and loans should be paid off before the New Year.

The custom of fireball swinging (this seems a bit frightening to me!)is quite popular in Stonehaven (Northeast Scotland). People make balls of chicken wire, tar and paper. Each ball has a 2m wire attached to it. Swingers then swing the balls over their body and head while walking through the streets. The main attraction of the day is casting the burning balls in the harbor. This makes the display even more impressive in the evening time. It signifies the power of sun to purify the world by consuming all evil spirits.

In many places in Scotland, people light bonfires and straw like figures called Auld Wife which represents old year thrown in the burning fire. There is also a torchlight procession which adds to the ongoing New Year activities. Crackers are also burned to scare off the evil spirits.

First footing is a tradition that starts immediately after midnight. The first person to step in the house sets the luck for the coming year. A tall, dark, and handsome man is welcomed bearing the New Year gift. The gift should be symbolic such as salt, coal, whisky, shortbread and black bun.

As soon as church bells strike at midnight to welcome the New Year, people start singing the traditional New Year song "Auld Lang Syne" .

The first Monday of the New Year is celebrated as Handsel Day. On this day, employers present gifts to their employees, and children are given presents by their parents.

The first person to rise up in the morning take Het Pint (spiced ale) to those members who are still asleep. On the New Year's day, children get up early and take rounds singing traditional songs. They are given coins, pies, apples and candies for their singing.

New Year celebrations are a blend of music, drinks and dance when it comes to Scotland. All party halls, clubs, discotheques and restaurants are thronged with people in full party mood. People hug, kiss and wish each other Happy New Year. Special food eaten on this day include wine, cordials, cheese, bread, currant loaf, cones and oatcakes.

Victorian Vinegar Cookies

In Victorian times, lovers declared their affections via words, songs, pictures and foods. Here is a cookie that you're sure to love. Don't let the fact that there is vinegar in them deter you from trying this sweet. They are wonderful.
Ingredients:
1 cup butter
1 cup margarine
1 1/2 cup sugar
2 cups finely chopped walnuts
2 tablespoons white vinegar
3 1/2 cups flour
1 teaspoon baking soda
Directions:
Cream butter and margarine. Add sugar and vinegar. Beat until fluffy. Sift flour and soda and add to mixture. Stir in nuts.

Drop onto ungreased cookie sheet using scant teaspoonful.

Bake at 300 degrees for 10-12 minutes. Cool on opened, brown paper grocery bag or parchment to absorb some of the butter.

I love using my crockpot, especially during the cold winter months. Using it to prepare dinner is great, but have you thought of using it to create breakfast? Imagine waking up to the aroma of this wonderful, warm cobbler. If you have a large crockpot you might want to double the recipe so that you have enough ingredients in it as to not allow any scorching. You can refrigerate the leftovers. Set it before you go to bed and start your morning off right.

Ingredients:
4 medium-sized apples or pears (or both!), peeled and sliced
1/4 cup honey
1 tsp cinnamon
2 tablespoons butter, melted
2 cups granola cereal

1. Place apples in slow cooker and mix in remaining ingredients.
2. Cover and cook on low 7-9 hours (overnight) or on high 2-3 hours. Serve with milk.

Rosemary-Lemon Verbena Tea Cake

I know what you're thinking...what a combination for a cake! I admit that lemon and rosemary sound an odd combination in a baked good, but you have to give this cake a try! Perfect for the spring and summer months, it will scent your winter cottage with the smell of seasons to come. It somehow enhances your mood just taking in the aroma wafting from the oven.

I have rosemary growing all year here in California, but if you don't have a plant, just visit your local grocer. You're sure to find a few sprigs of it in the fruit and vegetable aisle next to the lemon verbena.

You can use mini bundt cake pans and freeze your little cakes for upcoming tea with friends. Freeze without the glaze and glaze right before you're ready to serve!
(Note:If you use mini bundt pans you will need to adjust the baking time. In my oven it would be approximately 20 minutes)

Ingredients:
1 package yellow cake mix
4 eggs
1 cup water
1 package vanilla pudding mix
1/2 cup oil
2 tablespoons lemon juice
1 tablespoon fresh rosemary, finely chopped
2 tablespoons lemon verbena, finely chopped

Mix all ingredients for 2 1/2 minutes and pour into a lightly greased bundt pan.
Bake in a 350 oven for approximately 40 minutes. Cool 15 minutes then remove and add glaze.

Glaze
Ingredients:
1 cup powdered sugar
2 tablespoons lemon juice

Combine and drizzle over warm cake.

That you can polish your formica countertops to a sparkle with club soda? Club soda has many great uses beyond being a delicious drink. It's also inexpensive and easy to find, and can be used to help keep porcelain sinks and fixtures clean too! Pour it right over the sink area and use a paper towel to wipe it up. It cleans quickly and effectively. Club soda can remove rust stains as well. Just pour the liquid on the stain and allow it to sit for a moment. It will more often than not wipe away easily.

Using it on wine is the most popular, however, most food stains can be removed with blotting club soda onto the stain. Blood and grease can also be removed using club soda and it works on clothing, fabrics, upholstery and carpet. Just pour it onto the stain and rub it in. Allow it to sit a few minutes before removing.

Need to quickly remove bugs, grease or stains off the windows in your car? Use club soda. Keep a spray bottle in your car for quick clean ups. It can also keep chrome shiny. Just spray and wipe.

It's also great for your plants! First make sure that it has gone flat, and then water. Your plants will be very happy with the extra minerals.

Clean your jewelry with club soda and it will sparkle and shine. Gems will look brand new.

It's great for soothing an upset stomach as well. Just drink a glass and you'll feel better quickly.

Know that familiar green hair that blondes get when they swim in chlorine? Club soda will help take it out. Just rinse your hair with the club soda, allow it to soak for a minute and then rinse clean.

Old Fashioned Bean Soup

I love old recipes and have quite a collection of them. As I was browsing through my files the other day I came across this one. I love bean soup and if you use the crock pot it couldn't be easier. Bake some biscuits or bread to go with it and you have some real comfort food for a cold winter evening.

The following recipe was transcribed verbatim from The Daily Picayune, New Orleans, Orleans Parish, Louisiana.

January 16, 1912

Put in to soak overnight one pint of white beans. Next day put on to boil a piece of lean beef, a soup bone with a bit of meat on it is best, and a piece of fat pork about three inches square. Turn in the beans, water and all. Put in a little pepper and salt and and a bit of sliced onion. Cook at least four hours. At the proper time, so as to be thoroughly cooked at serving time, put in a few carrots, potatoes and sliced turnips. Old-fashioned, but delicious.

Of course you can alter this recipe to use in your crock pot by soaking the beans overnight and then placing all ingredients in your cooker to cook all day. If you're vegetarian you can omit the meat and add more veggies. Enjoy!

Orange Irish Whiskey Marmalade

Just a few easy additions brings every day orange marmalade into the realm of the special. This makes a great gift for bread and marmalade lovers. Also great for special teatime treats.

Ingredients:
1/4-cup plus 2 tablespoons water
1/4-cup granulated sugar
1 cup good-quality orange marmalade
2 tablespoons Irish whiskey

1. Combine the water and sugar in a saucepan over medium-high heat. Bring to a boil and cook until a candy thermometer reads 200 degrees. Stir in the marmalade and cook until the thermometer reads 240 degrees.

2. Stir in the Irish whiskey and cook, stirring, until thoroughly incorporated, about 1 minute.

3. Remove from the heat and allow the mixture to come to room temperature. Spoon the marmalade into a clean jar, cover, and store in the refrigerator for up to 1 month. Makes about 1 cup.

Serve on toasted Freckle Bread or Irish Soda Bread.

Spiced Soda Bread

I love the smell of bread baking in the oven. This soda bread is wonderful and perfect for breakfast or tea.

A tip when making Irish soda bread, don't over knead the dough as it will produce bread which Irish mums call "hard as the hobs of hell."

Ingredients:
3 cups raisins
2 cups water
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon allspice
1/2 cup butter
1 1/2 cups sugar
3 eggs, beaten
1 cup liquid from soaking raisins

In a saucepan, combine raisins and water; bring to a boil. Cover and simmer over low heat for 15 minutes; drain and reserve 1 cup of liquid (if not enough liquid left, add a little water to make 1 cup).
Set raisins and reserved liquid aside.
Sift together the flour, baking soda, cinnamon, nutmeg, salt, and allspice.
In a mixing bowl, cream butter and sugar; add eggs and the raisin liquid and mix until well blended.
Stir in dry ingredients until blended; add raisins.
Pour batter into 2 greased and floured 9x5x3-inch loaf pans.
Bake at 350 for 35 to 40 minutes.
Cool soda bread in pan for 5 minutes, then turn out onto a rack to cool completely.

Holiday Popcorn Snowman

Spend an afternoon with your children or grandchildren and have a great tasting treat at the end of the day. Have some fun with your popcorn and make these adorable snowmen!

Ingredients:
10 cups popped popcorn
1 (1-lb.) package large marshmallows
1/4 cup (1/2 stick) butter or margarine
1 teaspoon vanilla
Decorations: sprinkles, licorice, gum drops, cinnamon candies, pretzel sticks etc.
Instructions:

Melt marshmallows and butter in a large saucepan. Remove from heat and stir in vanilla. Let stand for 5 minutes.

Pour over popcorn and stir. Butter hands well and form into balls. Decorate as desired.
Yield: 10 balls, 5 Snowmen (2 balls each)

Almond Meringue Cookies (DIABETIC)

Don't forget those who are watching their weight, as well as the diabetics in your family, while baking your Christmas cookies this year! Here is a wonderful meringue cookie that is great for everyone. Enjoy!

Ingredients:
4 egg whites
8 tsp. powdered skim milk
1 tsp. vanilla extract
1 tsp. almond extract
1 tsp. liquid artificial sweetener
Cinnamon to taste

Beat egg white until stiff. Add skim milk powder. Mix well. Add extracts and sugar substitute. Drop cookies by spoonfuls onto cookie sheet. Bake at 275 degrees for 45 minutes. Remove from cookie sheet and dust with cinnamon.
Makes about 2 dozen.

Scenting Your Cottage

With doors and windows closed during the winter months, it's nice to scent your cottage with wonderful aromas. Here are some recipes I have found that leave your home fresh smelling.

Room Freshener
Dilute an essential oil using the ratio of 10 drops of oil to 7 tablespoons of water and use it in a metal or ceramic sprayer as the oils will deteriorate if stored in plastic.

Citrus-Mint Room Mist
Mix the essential oils in a small glass bottle, shake, and store in a cool, dark place. Add 6 drops to one cup of water and spritz the liquid into the air. Another fragrant idea is to place a few drops on a cotton ball and tuck into your dresser drawer, or closet shelf.

Lavender Sachet Bags
The most traditional of all scented bags, the lavender bag has enjoyed such enduring popularity because it is deliciously fragrant and keeps moths at bay.
Makes 5 bags
3 oz. lavender
1 oz. ground orris root
25 drops lavender oil
Divide the filling equally between fabric bags and fasten each bag with a tie, ribbon or cord.

Furniture Polish
This is a simple polish to make, and the addition of wood oils will give it an attractive resiny fragrance.
Makes 1 cup
3-oz. natural beeswax
3/4 cup pure turpentine
20 drops cedarwood oil
10 drops sandalwood oil
Step 1
Grate the beeswax coarsely and place in a screw-top jar.
Step 2
Pour on the turpentine, screw on the lid and let sit for one week, stirring occasionally until the mixture becomes a smooth cream. Add the essential oils and mix well. The polish is then ready to use.

Pomanders
Popular since Tudor times a pomander will give off its scent for years. The Victorians hung pomanders in their closets to ward off moths. Check my archives on how to make your own pomander.

Herb Spheres
Use your creativity to create beautifully scented spheres.
1 Styrofoam Ball, Pyramid or shape of your choice
1 Cup dried herbs or potpourri, dried rose petals or dried small flowers for a 6" size ball
White Glue
Twine or Ribbon
Pour herbs mixture into a bowl. You may choose to grind leaves or petals in a coffee grinder or food processor or glue them on separately. Cover an area of the ball with glue and roll ball through mixture, covering an area at a time. Cloves may be glued on separately. Cover ball with waxed paper and firmly press. Allow to dry completely before adding ribbon.

Door Sachets
Make small fabric bags and fill them with potpourri or cotton balls impregnated with essential oil (ensure that the oil is at the center of the cotton or it may stain the fabric). Fasten the sachets with ribbon or cord and hang them on door handles. As the door is opened and closed it will waft the fragrance around the room.

Simmer Up Some Homemade Vegetarian Vegetable Soup

Homemade vegetable or chicken soup, minestrone, chili, beef stew, there's no end to the frugal magic that you can create with a soup pot and a handful of ingredients. Hot soup and warm bread on a cold winter's evening...what could be a more comforting and yet so simple?

Ingredients:
4 cups vegetable broth
4 cups tomato juice
1 tablespoon basil leaves, dried
1 teaspoon salt
1/2 teaspoon oregano, dried
1/4 teaspoon pepper
1 cup carrot, chopped
1 cup celery, chopped
1/2 cup onion, chopped
1 cup mushroom, sliced (optional)
2 garlic cloves, finely chopped
1 (28 ounce) can tomatoes, diced (undrained)
1 1/2 cups rotini pasta, uncooked
Shredded parmesan cheese, if desired
Directions:
Mix all ingredients except pasta and cheese into a 4-5 quart slow cooker.
Cover and cook on low 7-8 hours or until veggies are tender.
Stir in pasta. Cover and cook on high heat setting 15-20 min or until pasta is tender. Sprinkle each serving with cheese.

If your cat loves treats as ours does, why not make something special for him/her this Christmas? It's easy and you will be loved for it.

Ingredients:
1/2 cup canned salmon
1 tablespoon corn oil
1 medium egg (beaten)
1 cup breadcrumbs (whole wheat preferably)
1/4 teaspoon brewer's yeast

Crush the salmon in a medium bowl into very small pieces. Add the rest of the ingredients and mix well. Place 1/4 teaspoon full on greased cookie sheet and bake for 7 - 8 minutes at 350. Cool and store in the refrigerator in a sealed plastic container.

Hot Cocoa Mix...Jar Gift Idea

One is never to old to enjoy hot chocolate, and this is a special way to share it with a friend. Mix all ingredients, put it in a pretty jar with a bow on top, and it makes for a special cold weather gift!

Ingredients:
3 cups powdered milk
1/2 cup cocoa
3/4 cup sugar
Dash of salt

Attach this recipe to the jar:
Hot Chocolate
Serves 1

4 tablespoons Hot Chocolate Mix
8 ounces boiling water
Marshmallows or whipped cream

Place the Hot Chocolate Mix into a mug. Pour in the boiling water. Stir until the chocolate mix is dissolved. Garnish with marshmallows or whipped cream.

These frugal gifts are great for any occasion all throughout the year, not only Christmas, but birthdays, anniversaries, Valentine's Day, Mother's Day, Father's Day, end-of-school teacher gifts and more. They also make great hostess gifts if you'll be attending any parties this season. The key to enjoying the holiday without money worries come New Years is planning.

I know you've probably heard it before but it's really true, you don't have to spend a lot of money to find that perfect gift for someone. Just be sure to put some time and thought into it and your gift will be well received.

Baking A Cake This Holiday?

If you bake cakes, I'm sure you've experienced some of the issues below. It's annoying to plan a special dessert, and spend all the time baking it, only to have it not turn out. Sometimes you can camouflage the mistake with your cakes, and sometimes you can't.

Did you know that flour has the tendency to pack down and sifting will save you money by only using the amount necessary? Never press the flour down in a measuring cup or shake it down. Your cakes will suffer if you do.

Here are some causes for cake failures:

Cake will fall if too little flour is used
Cake will rise too high in center and crack if too much flour is used.
Cake will brown on top too much before it has risen enough if oven heat is too high.
Cake will be soggy if too much shortening is used.
Cake will be too heavy if too much sugar is used.
Cake will have large holes and tunnels if you beat too much after flour is added.

Did you realize that one of the best methods of keeping the insides of a cake from drying out is to place a piece of fresh white bread next to the exposed surface? You can afix it with a short piece of uncooked spaghetti until you are ready to frost.

Among the myriad of tasks associated with prepping a big meal, ensuring everyone sits in the right spot at the dinner table can get lost in the holiday shuffle. Plot out your seating plan with these fast and easy place card ideas.

Gift everyone with a beautiful holiday ornament for their tree this year. Use the top to hold their name or special message and rest it in their place at the table.

Dot your tables with dainty snowflake place card holders for delicate winter themed holiday parties. You can purchase these for very little cost at office supply stores or where you purchase your school supplies. Each snowflake has a sturdy metal clip attached to the back to hold your place cards, menu cards or photographs. These place card holders will make wonderful photo stands for your guests after the event. Tie a delicate bow in the color of your choice as a little take home gift.

Here's a way to dress up your dining room and make space on the table for heaping plates of food: Tie ribbon (any width or pattern is fine) around the backs of chairs and hang the folded place card on it. You can decorate or have just the person's name on it and it will look elegant.

Save a tree and make "cards" out of something your family can sink their teeth into. Winter or Christmas inspired cookies iced with your guest's names let them know exactly where to sit and what's for dessert.

Find tiny vases, fill with stone and add one tiny bamboo branch to each vase. If you can't find vases, use recycled baby food jars, or other recycled items. Paint them or cover them with appropriate holiday-colored tissue paper.

Live near the beach? Add a nice seashore touch to the holiday table setting. For a winter holiday this place card item will bring an element of surprise to the holiday table setting. For an added touch, tuck a natural sprig from fresh greens or a dried flower into the end of an open shell and stamp the name of the guest onto the shell.

Soy candles can also provide a nice place card holder, as well as serve as a tiny token gift for holiday guests. Cut a square of tissue paper in a holiday-related color. Place the soy candle on the square, and lift up the corners of the tissue paper. Tie an off-white string around the tissue tissue paper, half way up the candle. Include a name tag. Wrapping the candle in tissue paper will make a more festive holiday table setting.

Vegetarian Cassoulet

Get out your soup pot or crockpot and warm yourself up with some homemade soup. White beans slow cooked with vegetables and fresh herbs--parsley, rosemary, lemon thyme, and savory. What could be better on a cold December day?
Ingredients:
2 tablespoons olive oil
1 onion
2 carrots, peeled and diced
1 lb dried navy beans, soaked overnight
4 cups mushroom broth
1 vegetable bouillon cube
1 bay leaf
4 sprigs fresh parsley
1 sprig fresh rosemary
1 sprig fresh lemon thyme, chopped
1 sprig fresh savory
1 large potato, peeled and cubed
Directions:
Heat a small amount of oil in a skillet over medium heat.

Cook and stir onion and carrots in oil until tender.

In a slow cooker, combine beans, carrots and onion, mushroom broth, bouillon, and bay leaf.

Pour in water if necessary to cover ingredients with water.

Tie together parsley, rosemary, thyme, and savory, and add to the pot. Cook on Low for 8 hours.

Stir in potato, and continue cooking for 1 hour.

Remove herbs before serving.

Refreshing Orange Body Scrub

With the cold days upon us we have to take extra care of our skin. Make your own body scrub and have a home spa day. You could even treat yourself to an at home manicure and pedicure. Not only will you benefit but the orange will scent your bathroom with a wonderful aroma and you will feel refreshed. Make extra and give as a gift this holiday season!

Ingredients:
1/2 of an Orange
4 T Cornmeal
To Make: Squeeze orange juice and pulp into a bowl and add the cornmeal. Mix into a paste.

To Use: Apply onto freshly washed face and body. Scrub gently for 2-3 minutes. Rinse, tone, moisturize.

Christmas Sandwich Creme Cookies

These cookies are wonderful, and not just perfect for Christmas, but any time of the year. Just change the color of the food coloring in the filling and they are ready for any occasion. I have also been known to put ice cream between the sandwich cookies in lieu of the filling in the summer months. I then wrap them in plastic wrap or waxed paper, place in a freezer bag, and have a great treat any time we fancy one.

Ingredients:
1 cup butter (no substitutes) softened
1/3 cup whipping cream
2 cups all purpose flour
sugar

Filling:
1/2 cup butter (no substitutes) softened
1-1/2 cups powdered sugar
2 teaspoons real vanilla
food coloring

In a mixing bowl, combine butter, cream and flour; mix well.
Cover and refrigerate for 2 hours or until dough is easy to handle. Divide into thirds; let one portion stand at room temperature for 15 minutes (keep remaining dough refrigerated until ready to roll out). On a floured surface, roll out dough to 1/8" thickness. Cut with 1-1/2" round cookie cutter. Place cut outs in a shallow dish filled with sugar; turn to coat. Place on ungreased cookie sheet. Prick with a fork several times. Bake at 375 for 7-9 minutes or until set. Cool on wire racks.

For filling:
In a mixing bowl cream the butter, powdered sugar and vanilla. Tint with food coloring of your choice. Spread about 1 teaspoon filling on half of a cookie, top with remaining cookie.

Makes about 36-40 cookies.

Christmas In The Victorian Era

As a lover of the Victorian and Edwardian Eras I am fascinated by the traditions. Read on to learn some of the information I have come upon over time. I am especially fond of the idea of Christmas gift giving in the "old days" being focused on handmade gifts and food items, and simple, yet elegant Christmas decorations.

Christmas Traditions
Kissing beneath the mistletoe, Santa, exchanging gifts, caroling, all wonderful traditions embraced by the Victorian Era, are some of our best loved traditions today. The Nativity has been celebrated since the 4th century. "The Colonies", however, were slow to embrace the idea of Christmas, as the celebration of a Father Christmas in his long fur trimmed robes was seen as a heathenish notion.

The Christmas Tree
The Christmas tree has been a German tradition since as early as the 17th century, but many ancient civilizations held evergreens to be a symbol of life during the long winter months and decorated trees as a symbol of eternal life. In 1841 Prince Albert, German husband of Queen Victoria, introduced the charming custom to the royal family. In 1850, a tinted etching of a decorated tree at Windsor Castle was published and the Tannenbaum became a necessity for every fashionable Victorian home. It was a tradition quickly embraced by Victorian England. Live trees were set up for the Christmas season decorated with lighted candles, draped with tinsel, ribbon, paper chains, cookies and candies.

Although the Victorian idea of Christmas was not commercial, having more to do with food and the exchange of handmade gifts, New York soon saw the commercial advantages of a holiday full of the exchange of gifts. By the 1880's Macy's department store windows were filled with wonderful dolls and toys from Germany, France, Austria, and Switzerland. Another window boasted scenes with steam driven moveable parts.

Homemade cornucopias of paper filled with fruit, nuts, candy, and popcorn were hung from branches of trees in America and England. Beautiful shaped cookies were hung for treats on Christmas day. Often the gifts were also wrapped and hung from branches.

With the growing popularity of Christmas trees, manufacturers began producing ornaments around 1870. Also popular were molded wax figures of angels and children. Many ornaments were made of cotton-wool wrapped around metal or wood and trimmed with embossed paper faces, buttons, gold paper wings and "diamond dust", actually powdered glass.

Caroling
The custom of caroling is an English tradition which was quickly taken up by America. In cities, the approaching holiday season was marked by strolling carolers, usually in groups of three, one caroler to play violin, one to sing, and one to sell sheet music. Holiday shoppers would pause to purchase music, joining in for a few stanzas before hurrying homeward. Carolers would stop at houses to sing, hoping to be invited in for a warm drink.

Wouldn't it be wonderful if we could be transported to the celebrations of that era?

Your Crowning Glory...

Did you realize that your hair, or "crowning glory" is one of the most indestructible parts of your body? As such, it is believed that a sudden loss of hair is unlucky, forecasting a decline in health, loss of property or failure in business, or the death of a closely related child. Red hair is associated with fiery tempered people (of which I can personally attest to since I was born with red hair, which has since "faded" with age); black and dark brown hair indicate strength; and fair hair implies timidity.

On a man, if the hair grows low on the forehead and back above the temples he will have a long life; if a woman's hair grows in a low point on her forehead (a widow's peak) she will outlive her husband, and if a woman suddenly develops curls on her forehead it is said her man has not long to live.

Lank (long, straight and limp) hair denotes a cunning nature; Curly haired - good natured and full of fun; Long hair - strength and luck.

It's said to be unlucky to have your hair cut when the moon is in the wane as this will cause it to fall out and lose its lustre. Don't attempt to cut your own hair lest you want to tempt fate.

Would you like to determine your future? Set fire to some strands of your hair (cut them off first please!). If they burn brightly, you are in for a long life. If they splutter and smoulder, it is said to be a death omen. Never pull out grey hairs, for one will be replaced by ten. It has often been believed that a sudden fright can turn hair white.

Celebrating Ancient Yule...

During medieval times, the decorated Yule log was ceremoniously carried into the home on Christmas Eve, and placed in the fireplace. Traditionally the Yule log was lit with the saved stump of last year's log, and then it was burned over the twelve days of the winter celebration. It's ashes and stump were kept until the following year to sprinkle on the new log, so that the fortune would be passed on from year to year.

Ashes from the Yule log were mixed with the cattle feed to ensure their health and in other regions the ash was sprinkled around fruit trees to increase their yield of fruit.

If you would like to practice an old tradition for luck throughout the New Year, hang a sprig of mistletoe above a major threshold in your home and leave it there until next Yule.

Rebirth of the Sun, The longest night of the year, The Winter Solstice, Introspect, Planning for the Future.

Symbols of Yule:
Yule log, or small Yule log with 3 candles, evergreen boughs or wreaths, holly, mistletoe hung in doorways, gold pillar candles, baskets of clove studded fruit, a simmering pot of wassail, poinsettias, christmas cactus.

Herbs of Yule:
Bayberry, blessed thistle, evergreen, frankincense holly, laurel, mistletoe, oak, pine, sage, yellow cedar.

Foods of Yule:
Cookies and caraway cakes soaked in cider, fruits, nuts, pork dishes, turkey, eggnog, ginger tea, spiced cider, wassail, or lamb's wool (ale, sugar, nutmeg, roasted apples).

Incense of Yule:

Winter Solstice...Ireland

December 21st is an important date. It's both Winter Solstice and the day the Sun moves into focused Capricorn. In old Europe, it was known as Yule.

Our ancestors lived in a world where everyone believed in mystery and magic. Every year they gathered together to celebrate the seemingly miraculous return of the light after the longest night of the year. To this day, people all over the world celebrate Winter Solstice as a time of rebirth, a new beginning and a chance to marvel at the power of transition from darkness into light.

A Winter Solstice celebration depends on illumination to ward off the darkness of winter, and to spark our imaginations. The very first Solstice festivities often featured a large bonfire around which members of the community would dance. Whether we congregate around a flame or a lightbulb (which is more likely these days), fire energy is key to providing a focus for our attention.

At Newgrange in Ireland, the passage and chamber inside the ancient mound are illuminated by the winter solstice sunrise. A shaft of sunlight shines through the roof box over the entrance and penetrates the passage to light up the chamber. It was apparently designed specifically to provide natural illumination to the passage at the winter solstice. This phenomenon was re-discovered only as late as 1967 by Professor O'Kelly, according to the Newgrange Solstice Webcast. The tour guides say it's bright enough to read a book -- but only if it's a sunny morning.

The Wren...

went hunting for the wren.

I am reposting my Wren article since it is inching ever closer to wren day. Did you know that the wren was for many years hunted and killed, partly out of hatred (it was regarded as a sacred bird by the Druids and consequently denounced by the early Christians) and partly because it was believed that the bird's feathers would prevent one from drowning? It is now considered very unlucky for a sailor to kill a wren.

Wren day also known as Wren's day, Hunt the Wren Day or The Hunting of the Wrens (Irish: Lá an Dreoilín) is celebrated on 26 December, St. Stephen's Day, on the Isle of Man, Ireland, Wales and Newfoundland. The tradition consists of "hunting" a fake wren, and putting it on top of a decorated pole. Then the crowds of mummers or strawboys celebrate the Wren (also pronounced as the Wran) by dressing up in masks, straw suits and colorful clothing and, accompanied by traditional céilí music bands, parade through the towns and villages in remembrance of a festival that was celebrated by the Druids. These crowds are sometimes called wrenboys.

A wren is said to have betrayed Irish soldiers fighting the Norsemen by beating its wings on their shields. It was also blamed for betraying St. Stephen, the first Christian martyr. This is the usual explanation why the wren is the hunted bird on St. Stephen's day, though there are many.

Some more tidbits on the wren are:
It is alled Drui-en or Druid bird in Irish Gaelic. In Welsh the word Dryw means both druid and wren.

The wren is as the Druid: known to be cunning. The wren could soar to heights while also navigating hedges and underbrush.

It is said that the Druid's house was the wren's nest and that the wren's nest was protected by lighening.

Whoever tried to steal wren's eggs or baby wrens would find their house struck by lightning and their hands would shrivel up.

The wren symbolised wisdom and divinity. It is difficult to actually see a wren. At New Year it is said that the apprentice Druid would go out by himself into the countryside in search of hidden wisdom. If he found a wren he would take that as a sign that he would be blessed with inner knowledge in the coming year. Finding a creature small and elusive to the point of invisibility was a metaphor for finding the elusive divinity within all life.

In Scotland it was the Lady of Heaven's Hen and killing it was considered extremely unlucky.

In Ireland it was known as 'Fionn's doctor'.

Lightning was the weapon of the thunder bull-god Taranis, who often inhabited oak trees, and the wren was sacred to Taranis.

Christmas Punch Recipes...

Holiday Cheer Mimosa
This simple drink recipe requires only two ingredients and takes just minutes to prepare. Perfect for a romantic touch.
Ingredients:
Champagne, chilled
Cranberry juice cocktail, chilled (orange juice can be substituted)
Directions:
Fill chilled champagne flutes half-way with cranberry juice cocktail.
Fill to top of glass with champagne.
Stir gently and serve.

Christmas Cranberry Cheer
Ingredients:
64-ounce cranberry juice cocktail, chilled
1 bottle red wine, chilled
1/3 cup bottled sweetened lime juice
1 liter bottle lemon-lime soda
Directions:
Mix all ingredients in a large punch bowl.
Serve.

Christmas Cranberry Punch
Ingredients:
2 cups Vodka
4 cups cranberry juice
1 1/2 cups lime juice
2 cups water
3 tbsp. sugar
Directions:
Combine ingredients in a large and festive punch bowl.
Serve

Last Minute Gift In A Jar

Are you looking for gift ideas? I love giving jar gifts and everyone who has received them has loved them. Who doesn't like to eat? This is a wonderful one you can mix up in no time and you may already have everything you need for it in your pantry! Make a few of these and have them on hand in case someone unexpected stops in for the holiday. You will have a gift just ready and waiting. You can always use it later yourself if it is not needed.

Apple Cinnamon Muffin Mix
Ingredients:
2 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 cup raisins and/or nuts
In a bowl, mix together first 5 ingredients. Place in an air tight container or jar. Package raisins and nuts separately in plastic wrap or plastic baggie and place on top of mix.
Topping
3 Tbsp. sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Mix topping ingredients in a bowl. Package in a small bag and place on top of nuts and raisins.

Attach this to the jar:
Apple Cinnamon Muffin Mix
To prepare, preheat oven to 350°.
Mix together:
Apple Cinnamon Muffin Mix
raisins and/or nuts
1 cup apple juice
2 Tbsp. oil
1/2 cup applesauce
margarine, melted
Stir just until combined. Spoon into lightly greased muffin tins and bake for 20-25 minutes or until toothpick inserted in center comes out clean. While still warm, dip in melted margarine and then topping. Makes 12-15 muffins.

Chocolate Dipped Pretzels

Don't spend your money on gourmet pretzel treats! Chocolate Dipped Pretzels are easy to make, and the combination of sweet chocolate and salty, crunchy pretzels is fantastic. You can use any pretzels you like, but the large pretzel rods or twists work best, since they are faster to make and they look great. You can get creative and sprinkle them with sprinkles, drizzle them with white chocolate, roll in nuts, or whatever you'd like! Stand some up in a pretty glass jar with a ribbon around the top and they are a gift that's sure to please.

Ingredients:
1 package (12 oz) semi-sweet chocolate chips
1 tablespoon shortening
2 dozen pretzel rods or large pretzel twists
Assorted sprinkles or small candies (optional)
1/2 cup white chocolate chips (optional)
Preparation:
1. Prepare a baking sheet by lining it with aluminum foil.

2. Combine the chocolate chips and the shortening in a large microwave-safe bowl, and microwave until melted, stirring after every minute.

3. If dipping pretzel rods, hold a rod by one end and dip it in the chocolate, leaving an inch or two uncovered. If you are dipping pretzel twists, drop the whole pretzel in the chocolate and submerge it slightly. Use a fork to pull the pretzel out of the chocolate. Shake the chocolate-dipped pretzels several times to remove excess chocolate, and place it on the prepared baking sheet. If you are using sprinkles or small candies, sprinkle them on when the chocolate is still wet. Repeat with remaining chocolate and pretzels.

4. Place the pretzels in the refrigerator for about 30 minutes to set the chocolate.

5. If desired, melt the white chocolate and drizzle it over the pretzels for a decorative look. Briefly return the candy to the refrigerator to set the white chocolate before serving.

Scottish Shortbread Mix...Jar Recipe For Gifts!

We love shortbread and this recipe never fails to bring a smile. I will sometimes bake this in a square pan and cut into squares, or even cut in rounds with a cookie cutter and bake. No matter the shape, it's delicious and shortbread lovers on your Christmas list will love it!

Ingredients:

1 1/2 cups all-purpose flour

3/4 cup powdered sugar

1/4 tsp. salt

In a medium bowl, combine all the ingredients, blending well. Store in an airtight container or jar if giving as a gift.

Attach the to the jar:
Scottish Shortbread
Makes approx. 16 pieces

Directions:
1 cup butter, softened
1 jar Scottish Shortbread Mix

Preheat the oven to 300 degrees F. Knead the butter into the shortbread mix and press the mixture firmly into an 8-inch pie plate, or shortbread mold. Bake for 1 hour. The shortbread should be pale in color, not browned. Cut into wedges while still warm.
